Avoid wet tools when manipulating honey. Shake thoroughly and leave to stand for 2 minutes. Meanwhile, prepare a espresso. On a carved old fashioned cocktail glass, pour pilé ice cubes and the strained mixture. For finishing, add the espresso and garnish with a topping of grated cassia cinnamon and cocoa.
